Ajouter une pinc\u00e9e de sucre, une \u00e9toile de badiane, 3 clous de girofle, 3 piments de la Jama\u00efque et 3 baies de gen\u00e9vrier, porter \u00e0 \u00e9bullition et r\u00e9duire de moiti\u00e9.<\/li><li>En m\u00eame temps, \u00e9pluchez les topinambours, r\u00e9servez 2 bulbes pour les frites, et coupez le reste en petits morceaux. Mettre les morceaux dans une casserole avec la cr\u00e8me de soja et 100 ml d&rsquo;eau, une bonne pinc\u00e9e de sel et laisser mijoter jusqu&rsquo;\u00e0 ce que les morceaux soient tendres.<\/li><li>\u00c9craser le magret de canard (couper la peau pour qu&rsquo;elle devienne bien croustillante \u00e0 la cuisson). Saler g\u00e9n\u00e9reusement de tous les c\u00f4t\u00e9s puis saisir c\u00f4t\u00e9 peau dans une po\u00eale ou une plaque chauffante chaude sans ajouter de mati\u00e8re grasse. Retourner apr\u00e8s 4 minutes et faire revenir encore 3 minutes de l&rsquo;autre c\u00f4t\u00e9. Ensuite, placez-le sur une planche \u00e0 d\u00e9couper et laissez-le reposer encore 3 minutes.<\/li><li>En m\u00eame temps, coupez les 2 topinambours restants en tranches fines \u00e0 l&rsquo;aide d&rsquo;une mandoline ou d&rsquo;un autre trancheur de cuisine. Frire en frites dans de la graisse de friture et saler g\u00e9n\u00e9reusement.<\/li><li>Pressez les morceaux de topinambour cuits \u00e0 l&rsquo;eau douce dans l&rsquo;extracteur de jus lent Hurom pour en faire une pur\u00e9e.<\/li><\/ol>\n\n\n\n<p>portion:<\/p>\n\n\n\n<p>D\u00e9posez une grande cuiller\u00e9e de pur\u00e9e au milieu d&rsquo;une grande assiette, puis frottez-la une fois avec la cuill\u00e8re. Enroulez la sauce autour.
