Eine Prise Zucker, ein Sternanis, 3 Nelken, 3 Piment und 3 Wachholderbeeren zu geben, zum Kochen bringen und auf die H\u00e4lfte reduzieren lassen.<\/li><li>Parallel die Topinambur sch\u00e4len, 2 Knollen f\u00fcr Chips zur Seite legen, den Rest in kleine St\u00fccke schneiden. Die St\u00fccke mit der Sojasahne und 100 ml Wasser, eine gute Prise Salz in einen Topf geben und alles k\u00f6cheln lassen bis die St\u00fccke weich sind.<\/li><li>Entenbrust zesillieren ( Haut einschneiden damit Sie beim Braten sch\u00f6n knusprig wird) . Von allen Seiten kr\u00e4ftig salzen und dann mit der Haut nach unten in eine hei\u00dfe Pfanne oder Grillplatte ohne Zugabe von Fett anbraten. Nach 4 Minuten wenden und von der anderen Seite noch mal 3 Minuten braten. Anschlie\u00dfend auf ein Schneidebrett geben und noch mal 3 Minuten ruhen lassen.<\/li><li>Parallel die \u00fcbrigen 2 Topinambur Knollen auf einer Mandoline oder anderem K\u00fcchenhobel in d\u00fcnne Scheiben aufhobeln. In Fritierfett zu Chips ausfritieren und kr\u00e4ftig salzen.<\/li><li>Die weichfekochten Topinambur St\u00fccke im Hurom Slow Juicer zu P\u00fcrre pressen.<\/li><\/ol>\n\n\n\n<p>Anrichten:<\/p>\n\n\n\n<p>Auf einen gro\u00dfen Teller einen ordentlichen L\u00f6ffel vom P\u00fcrre in die Mitte setzen, dann einmal mit dem L\u00f6ffel durch streichen. Die Sauce darum napieren.
